- Sweet soy sauce, to taste
- 1 large scallion, thinly diagonally sliced (about 1/3 cup)
Directions
The 1st step: Process chiles, shallots, garlic, and salt in a food processor or blender until very finely chopped, about 20 seconds, stopping to scrape down sides as needed.
The 2nd step: Saute in the heated oil with terasi over medium until slightly softened but still vibrant in color.
The 3rd step: Set aside the bumbu and cook egg until eggs are set but still creamy looking.
The 4th step: Add cooked rice, stirring to break up any clumps.
The 5th step: Add 3 tablespoons of seasoning, cook, stirring constantly, until rice is heated through and tinted the color of bumbu, about 2 minutes.
The 6th step: Season with salt or sweet soy sauce to taste.
The 7th step: Remove from heat then stir in sliced scallion.
